It’s that time of year again! Summer is in full swing, meaning it’s time to get that booty in check, and making healthier choices is a start. If you have a sweet tooth, stay the eff away from ice cream and pastries. Try switching it up with desserts that are actually good for you, like chia pudding! Chia seeds are a super food containing healthy omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants and calcium. They have a mild, nutty flavor and can be added to cereal, vegetables, rice, yogurt, drinks and baked goods. When added to liquid, the seeds expand creating a pudding-like texture. Chia pudding is extremely simple and makes the perfect dessert substitute. All you really need is milk and chia seeds! We linked up MISSBISH and Tracy Wei of CHINO restaurant in Hong Kong, who shares her healthy and delicious coconut chia pudding recipe.
What You Need:
250 ml Coconut Milk
40 grams Chia Seeds
Honey to taste
1 Fresh Ripe Mango
2 Fresh Kiwis
100 ml Coconut Cream
What To Do:
1. Mix the chia seeds and coconut milk together.
2. Let the mixture sit in the fridge for at least 3 hours.
3. Refrigerate the coconut cream in the fridge overnight.
4. Use a whisk and whip coconut cream until preferred consistency is achieved.
5. Mold chia seed and coconut milk mixture into a cup.
6. Place mango and kiwis on top.
7. Add a dollop of whipped coconut cream.
Notes:
– If the fruits are sweet enough, you don’t even need to add any honey.
– After you whip up the coconut cream, make sure you keep it chilled.
– You can keep the pudding in the fridge for up to 3 days.
